Karst prosciutto
Karst prosciutto is a dry meat of selected taste, which belongs to the group of Mediterranean prosciuttos.
For centuries, in this world of sparse vegetaion, in the immediate vicinity of Lipica, farmers have been preparing Karst meat specialties using traditional methods in early November.
Protected geographical indication
Karst prosciutto is one of the most prestigious Slovenian products. It is known for its high nutritional value, rich in protein. The secret of its excellence is reflected in the rich aroma, intense ruby color, juiciness and just the right slight salinity of each slice.
The European Commission registered Karst prosciutto as a “protected geographical indication” and thus recognized and confirmed the special quality, reputation, tradition and influence of the geographical area in the production of Karst prosciutto.
Karst prosciutto
matured for at least 12 months
It is prepared from carefully selected and chilled pork thighs. The time of salting and drying depends on the weight of the raw material and takes place in strictly controlled climatic conditions. When twelve months pass, we get a top quality product. The previously tender red flesh acquires a more intense color, a characteristic odor, and a firm but slightly softer structure. The product is salted with sea salt from the Piran salt pans.
Long-term drying of pork thighs with bone in typical karst bora wind, which lasts at least 12 months, gives the prosciutto its characteristic quality and special recognition, as well as a milder, less salty taste.

Drying of Lokavski prosciutto takes at least 12 months, giving it a special quality, intense color, noble, full taste and a medium firm structure. It differs from other Karst prosciuttos by its characteristic pepper sprinkling and maturing time.
The quality of Lokavski prosciutto was awarded a gold medal at the 41st international evaluation of meat and meat products in Gornja Radgona.

Home-made karst spek (bacon)
Home-made Karst bacon is a lightly smoked product made from carefully selected and chilled pork thighs, boneless, with skin and bacon. The salting and drying time depends on the weight of the raw material, takes about six months and takes place in strictly controlled climatic conditions. The previously tender red flesh acquires a more intense color, a characteristic odor, and a full, ripe flavor.
Home-made karst bacon has a pronounced, slightly spicy taste due to the addition of coarsely ground peppercorns. Home-made Karst bacon should not be too dry, as it loses its juiciness and characteristic range of flavors due to selected spices and longer maturation.
The quality of Home-made Karst bacon was awarded a gold medal at the 41st international evaluation of meat and meat products in Gornja Radgona.
