The most beautiful karst trails lead through the idyllic karst village of Lokev. The heart of the village itself is home to the oldest prosciutteria in the Slovenian Karst – Pršutarna Lokev s’krasa. It is here that we have been producing karst meat products for decades, according to the traditional recipes of our grandfathers and with the help of the unique karst climate, strongly affected by the cold northerly wind bora. This is the land of Karst prosciutto, the most prestigious Slovenian product.

Karst zašink
Karst zašink matures for up to ten weeks. It is wrapped in a special mesh, which gives it a characteristic flat shape. The special karst climate enables the production of a Slovenian product of special quality. All production phases from salting, drying or maturing and preparation for the market take place in the Karst area. Salting is done in the traditional, dry way.

Karst pancetta
The selection of fresh meat and bacon is important for the production of Karst pancetta. The bacon is made in the shape of a rectangle. Salting is done in the traditional, dry way using coarse sea salt.

In the magical environment of the village of Lokev, home to the prosciutteria Lokev s’krasa, you can find many stunning, captivating and distinguishable natural wonders. The uniqueness of the Karst landscape has been co-created over the millennia by the relentless bora wind and the hardy, proud but heartfelt Karst people. The village of Lokev has been inhabited since prehistoric times. Its remarkable history was marked by the Romans, the Templar Knights, and the Turkish invasions, when the Venetians built the picturesque defensive tower of Tabor in the village. Today, it houses a military museum that exhibits the Slovenian military history.
A stone’s throw away from the prosciutteria you can find the oldest Slovenian cave named Vilenica. Even today, the locals enthusiastically reveal the secret of how mythical fairies once lived in the cave. That’s how the cave got its name – fairy is spelled »vila« in Slovenian. Vilenica has been famous since the 17th century as the most beautiful cave in the native Karst, known for its large and mystically shaped stalactites and stalagmites.

Lipica lies in a beautiful natural habitat surrounded by an oak forest, where beautiful white horses roam the flowery meadows. Lipica is extremely important for its cultural, historical and natural heritage, as one of the oldest breeds of horses is bred and trained in the oldest European stud farm.

Karst caves are the most famous feature of the karst. The cave giants located in the immediate vicinity of the prosciutteria incite us with pride. The Škocjan Caves are the largest underground canyon in the world. Valuable finds from various historical periods tell stories of the use of Škocjan caves as spiritual shrines. Since 1986, the Škocjan Caves have been inscribed on the UNESCO World Heritage List.
Magical Štanjel, the most picturesque settlement in the Karst. It is well known for its charming narrow streets surrounded by karst stone houses. Archaeological excavations testify that the beginnings of Štanjel date back to prehistory. Štanjel is something special – it has a gentle soul and serenity that is incomparable to any other place. Today, it is an important cultural center of the Karst; its outskirts accommodate a karst prosciutto drying plant from the prosciutteria Pršutarna Lokev s’krasa – Kobjeglava plant.
